From England to Norway

In February 2022,  I left a career in Local Government and a life in the city centre of Manchester, England to see Scandinavia.

I wanted to learn why Scandinavia has such high percentages of 'human happiness', how it was leading the way in important issues such as sustainability,  and to see how life is with gender and wealth equality.

After exploring Iceland for a month, I arrived in Norway. Norway was the second of five countries to explore but I never left. I had found what I was looking for.

I spent my first night in Lofoten at Lydersen Rorburer in May 2022 where Kristian worked at the time.

One year later and the two of us are starting a business together in the area where Kristian grew up.

Vision

Here at På Land, we have 10 principles:

  1. Locality - showcasing what Lofoten archipelago has to offer from land and sea, supporting local businesses and producers, providing locals with a place of refuge and giving back to the local community

  2. Seasonality - a menu that reflects and works with the seasons and what is beneficial for ecosystems

  3. Foraging - using what grows in the wilderness and enjoying freely e.g. berries, seaweed, mushrooms

  4. Preserving - pickling vegetables, smoking and drying foods, making good things long-lasting

  5. Biodiversity - limiting waste, encouraging growth and eco-systems through responsible choices

  6. Accessibility - affordable products and menu, a place that welcomes everyone

  7. Quality - nutritious, wholesome food made according to standards, products that are well-made by trusted suppliers

  8. Transparency - open about our methods and ways of doing business, connected to the community

  9. Fairness - prices that do not take unfair advantage of tourism whilst remaining competitive in pricing

  10. Sustainability - long lasting partnerships with local suppliers, open year-round, reusing and recycling
